- clean fish
- rub with salt and wash
- put ginger and leeks in the stomach
- steam on a plate for 8 mins for a small fish
- after steaming, put the liquid from the fish in a sauce pan
- add soy sauce and mushroom sauce
- on a separate sauce pan, add oil and saute grated ginger, leaks and some dark soy beans only to heat them, remove immediately and place on top of fish
